A healthy, kid-friendly alternative to classic beef burgers!

 

Welcome to our family’s movie night!

 

We’re so glad to have you with us! Everything is planned and prepared by the four of us and takes place in our living room. It’s usually a Friday-evening event but sometimes, lack of free time and extra tiredness from a busy week may push it forward to Saturday. More time for back-to-back movies!

 

What can you expect to watch in our living room on such a night? Family movies (lots of them!), blockbusters, comedies and we never say no to a good movie marathon. Not in the same day of course! We recently watched the whole Star Wars series and we’re waiting for the new one to be released on disc. And I’ll admit it in public… I’m not a big science fiction fan… so I had never watched Star Wars before…

 

Guilty, I am…

 

… And, if you still like me after this confession,  let me tell you who holds the leading role in our family movie nights.

 

Food, of course!

 

On rare occasions, it’s just plain popcorn – always homemade and in abundance!

Sometimes, it’s popcorn with a twist, like caramel or peanut butter popcorn.

But most of the times it’s some kind of healthy fast food that we have unanimously chosen and prepared as a team. And if you read my previous post on burger buns, you already have an idea.

Freshly-baked multigrain buns, juicy chicken burgers, cheese slices and fresh vegetables build one of our all-time-favorite movie snacks. Together with homemade pizza and, of course Greek souvlaki, they make the three nominees for our family-movie-snack award!

 

Maybe you have planned a movie night for your family or friends tonight? Then you must try these burgers! You can pick your own favorite buns if you like but I’m sure you’ll want to try those chicken patties.

Healthy, homemade, low-fat, low-cholesterol, they really are the best alternative to classic beef burgers. They’re also kid-friendly – most children love them, even picky eaters. (Trust me, I have been raising one!)
And they’re so easy to make!

Chicken burgers (in multigrain buns)

  • Servings: 8-10 medium-size burgers
  • Difficulty: easy

Chicken burgers in multigrain buns, all homemade! | Healthy Bits and Bites

What you need:

For the patties:

• 1.1 lbs / 500 gr. minced chicken breast
• 1 medium-sized onion, chopped
• ½ cup breadcrumbs
• ¼ cup finely grated parmesan cheese
• 1 large egg
• ½ cup buttermilk
• ¼ cup olive oil
• 1/3 tsp curry
• 1 tsp chopped parsley
• Salt and pepper

For assembly:

Multigrain burger buns or your own favorite buns
Your favorite burger ingredients (cheese slices, tomato slices, lettuce leaves, mustard, ketchup, pickles, etc.)

 

What to do:

– Preheat the oven at 400°F / 200°C.

– In a large mixing bowl, add all the patties’ ingredients and mix well until you have a nice, smooth mixture. If it’s not too firm, you can place it in the refrigerator for 20 minutes.

– Divide the mixture in 8-10 parts, form patties and place them on a baking pan lined with parchment paper.

– Bake them for 25 minutes. Turn them upside down halfway through.

– Assemble your burgers according to taste.
