This perfect way of eating broccoli and cauliflower is a must-try!
The first time I thought of cooking those vegetables this way, I was thrilled!
I spent many years of my childhood eating boiled cauliflower and many dieting years of my adulthood eating steamed broccoli. I was trying to find another healthy and simple way to cook them.
Yes, I know. I could make lots of wonderful recipes with them. Add them to casseroles, make pasta recipes, even use them in pizza crust.
But let me repeat the key words I was looking for.
Simple. And healthy.
So, one day, while roasting chicken in the oven, and while I was preparing the steamer for one more salad of steamed broccoli and cauliflower – again… – the idea struck me! How about folding the vegetables in parchment paper and throw them in the oven? I mean, why not?
And I just love those side dishes that almost get prepared themselves while our chicken or meat or fish is being cooked.

You just add a few simple ingredients, put them in the oven, forget them for half an hour and then there you have it, steaming and ready to accompany your main dish!
Served with grated goat cheese and freshly-ground pepper, this baked salad is sure to become one of your favorite ways to eat these vegetables during winter.
Baked winter salad
What you need:
• 9 oz / 250 gr. raw broccoli, cut in small florets*
• 7 oz / 200 gr. raw cauliflower, also cut in florets*
• 2 medium carrots, cut in thin strips*
• 1 clove garlic, thinly-sliced
• 3 tbsp olive oil
• 2 tbsp fresh lemon juice
• 1 tbsp dried oregano
• Salt
For serving:
• 40 gr. goat cheese (or feta cheese), coarsely-grated
• Freshly-ground pepper
*You can adjust the vegetable quantities according to your own preference.
What to do:
– Preheat the oven at 400°F / 200°C.
– Put all the ingredients in a large bowl and gently stir until your vegetables are well coated.
– Empty the content of the bowl on a large sheet of parchment paper and fold the paper creating a parcel.
– Put your parcel on a second sheet of parchment paper with seam down and fold again so you have a double-sheeted parcel.
– Put it on a baking tray and bake for 30-35 minutes, depending on how cooked you like your vegetables.
– Carefully unwrap your baked salad and put it on a plate.
– Sprinkle the cheese and the pepper over it, serve and enjoy!
